Fajitas for Dinner

Over the past week I spent some time at Le Creuset. I was able to do a cooking demonstration using their new grill pan. It’s a 9.75 inch cast iron grill pan with raised sides. I’ll tell you more about it. But I was able to cook chicken fajitas for Cinco De Mayo. Here is the recipe below.

Ingredients:

1-2 Tbsp vegetable oil

1 pack of chicken tenderloins

1 packet of taco seasoning

1 bell pepper, sliced

1 large onion, halved and sliced

1 lime

1 avocado

1 pack of flour tortillas

  1. Brush oil all over the cast iron skillet and turn the heat to about medium.
  2. Sprinkle the taco seasoning on both sides of the chicken, but be sure to leave half for the veggies.
  3. Put chicken on the grill. Allow the chicken to cook fully. Once there are grill marks on 1 side then flip over to the other.
  4. When the chicken is fully cooked, transfer the chicken to a plate.
  5. Oil the pan again and place the peppers and onions on the grill.
  6. Season the veggies with the rest of the taco seasoning.
  7. Cook until wilted and charred.
  8. Place chicken back on the grill to rewarm.
  9. Place both chicken and veggies on a plate.
  10. Take 1 tortilla at a time and warm them on the grill.
  11. Put 2-3 chicken tenderloins in a tortilla and top with peppers, onions, and slices of avocado, and squeeze a little lime juice on the meat.
  12. Sit down and enjoy!

After I made the chicken fajitas, the employees chowed down… and they loved it. I have to say their new grill pan was a dream to work with. I liked it a lot. Just make sure to use a silicone brush and brush on the oil. You don’t want to heat up the grill pan dry. I loved the fact that I was able to get some nice grill marks on the meat and veggies without having to be outside.
